Walnut Crunch Couscous

Adapted from a recipe posted on
Serves 6
1 Tbsp. Ellyndale Organics™ Extra Virgin Olive Oil*
3/4 cup chopped NOW Real Food® Raw Walnuts*
1 small clove garlic, minced or pressed
1/2 cup lightly packed chopped fresh mint
1/2 cup lightly packed chopped cilantro
1/2 tsp. coarse salt
2 cups vegetable or chicken broth
1 cup dry NOW Real Food® Organic Whole Wheat Couscous*
  1. Heat olive oil in a skillet over medium heat. 
  2. Add walnuts and stir until lightly toasted and fragrant; about 4 minutes. 
  3. Add garlic and cook one minute. 
  4. Remove from heat and let cool. 
  5. Toss with mint and cilantro.
  6. In a medium saucepan, bring broth or water to a boil, then add couscous; remove from heat, cover, and let stand five minutes. 
  7. Fluff with a fork and stir in walnut-herb mixture.
