Couscous with Peas and Feta

Adapted from Southern Living, July 2001
Serves 6
1 1/2 cups water
1 cup uncooked Couscous*
1/4 cup Ellyndale Organics™ Extra Virgin Olive Oil*
1 tsp. grated lemon rind
1 Tbsp. fresh lemon juice
3/4 tsp. kosher salt
3/4 cup frozen sweet green peas, thawed
1/4 purple onion, thinly sliced
1/2 cup crumbled feta cheese
1/4 cup chopped fresh mint
2 Tbsp. NOW Real Food® Pine Nuts*
  1. Bring 1 1/2 cups water to a boil in a saucepan over high heat. 
  2. Remove from heat and stir in couscous; let stand 10 minutes. 
  3. Transfer couscous to a large bowl.
  4. Stir together olive oil, lemon rind, and next 3 ingredients; add to couscous, stirring with a fork.
  5. Toss peas, sliced onion, crumbled feta and chopped mint gently into couscous; cover and chill at least 2 hours. 
  6. Stir in the pine nuts just before serving.
