Super Soy Burgers

Adapted from Veggie Life
Makes eight 4-ounce patties
Pan spray
1 1/2 cups soybeans, cooked and mashed
3/4 cup brown rice cooked
3 tablespoons soy sauce
5 scallions, minced
1 tablespoon NOW® Nutritional Yeast*
1 tablespoon cornstarch
2 tablespoons Dijon mustard
2 tablespoons fresh mixed herbs, chopped
Salt & pepper to taste
  1. Preheat oven to 400 degrees.
  2. In a large bowl, thoroughly combine all ingredients. Let rest for 15 minutes.
  3. Form mixture into 8 patties.
  4. Place patties on cookie sheet and bake for 30 minutes, or until golden brown.
