Summertime Chicken Salad (Jane Truchan)
|4 chicken breasts, cooked and chopped|
|½ teaspoon pepper|
|1 - 4 oz. can of small Chinese noodles|
|Slivered almonds (optional)|
|¼ cup sugar|
|¼ cup white vinegar|
|½ cup vegetable oil|
|1 teaspoon salt|
|1 head lettuce|
|4 green onions|
|1/8 cup poppy seeds|
- Combine chicken, lettuce, green onion, poppy seeds, and almonds (if desired) in a salad bowl; mix well.
- Combine sugar, vinegar, oil, salt and pepper in a small bowl; mix well.
- Add dressing and noodles to salad at serving time. Toss and enjoy!
