Summertime Chicken Salad (Jane Truchan)
| Ingredients |
| 4 chicken breasts, cooked and chopped |
| ½ teaspoon pepper |
| 1 - 4 oz. can of small Chinese noodles |
| Slivered almonds (optional) |
| ¼ cup sugar |
| ¼ cup white vinegar |
| ½ cup vegetable oil |
| 1 teaspoon salt |
| 1 head lettuce |
| 4 green onions |
| 1/8 cup poppy seeds |
- Combine chicken, lettuce, green onion, poppy seeds, and almonds (if desired) in a salad bowl; mix well.
- Combine sugar, vinegar, oil, salt and pepper in a small bowl; mix well.
- Add dressing and noodles to salad at serving time. Toss and enjoy!
