Coconut Apricot Truffles
Adapted from “Jean’s Recipes”, from Jean Carper’s Stop Aging NOW web site, www.stopagingnow.com
Makes 3 dozen balls
| Ingredients |
| 1 1/2 cups NOW Real Food® Raw Almonds* |
| 2 cups NOW Real Food® Unsweetened Dried Apricots* |
| 2 tsp. cinnamon |
| 2 tsp. almond extract |
| 1/2 cup sweetened shredded coconut |
- In a food processor with the knife blade, thoroughly mix first four ingredients until mixture forms a ball.
- Using your hands, roll and press into 1-inch balls.
- Roll in coconut.

1 g fiber
