Macaroon Cupcakes
Makes about 3 dozen mini cupcakes
| Ingredients |
| 1 package (10 oz.) NOW Real Food® Coconut* |
| 1 can condensed milk |
| 1/2 cup butter |
| 1/4 cup sugar or NOW Real Food® Sucanat™* |
| 4 eggs |
| 1/4 cup NOW almond flour |
| 1 tsp. NOW Real Food® Vanilla Extract* |
- Beat butter and sugar until smooth.
- Add eggs.
- Add coconut & condensed milk alternately, then add the flour and vanilla.
- Mix well.
- Pour into mini cupcake pan lined with mini paper baking cups.
- Bake at 325 degrees for 15-20 minutes.
