Macaroon Cupcakes

Makes about 3 dozen mini cupcakes

1 package (10 oz.) NOW Real Food® Coconut*
1 can condensed milk
1/2 cup butter
1/4 cup sugar or NOW Real Food® Sucanat™*
4 eggs
1/4 cup NOW almond flour
1 tsp. NOW Real Food® Vanilla Extract*
  1. Beat butter and sugar until smooth.
  2. Add eggs.
  3. Add coconut & condensed milk alternately, then add the flour and vanilla.
  4. Mix well.
  5. Pour into mini cupcake pan lined with mini paper baking cups.
  6. Bake at 325 degrees for 15-20 minutes.
