Almond and Coconut Oil Scones

Adapted from NaturalNews, September 17, 2011.

2 1/2 cups NOW Real Food® Almond Flour*
1/2 tsp baking soda
1/3 cup NOW Real Food® Date Sugar*
or 5 tablespoons NOW Real Food® Organic Maple Syrup*
1/4 cup NOW Real Food® Organic Virgin Coconut Oil*
2 free range eggs
1 cup chopped NOW Real Food® Organic Unsweetened Dried Apricots*
1 cup chopped NOW Real Food® Almonds*
1 cup NOW Real Food® Organic Unsweetened Shredded Coconut*
  1. Preheat oven to 330 degrees Fahrenheit.
  2. Mix dry ingredients.
  3. Stir in wet ingredients.
  4. Stir in apricots, almonds and coconut then shape scones into small rounds.
  5. Bake on parchment paper line sheet pan for 15 - 20 minutes, keeping a close eye on them.
