Coconut Date Balls
Adapted from Stop Aging Now newsletter, recipe by Gale Maleskey, MS, RD
This healthy treat includes dates which are naturally sweet, and also contain trace minerals and fiber. Coconut, walnuts and flaxseed are all good sources of healthy fats.
Makes about 35 walnut-sized balls
| Ingredients |
| 2 cups dried dates, pitted |
| 1 cup NOW Real Food® Walnuts* |
| 1/2 cup NOW Real Food® Organic Flax Seed Meal* |
| 1/2 cup NOW Real Food® Coconut* |
- Grind the walnuts in a food processor until finely chopped.
- Add the dates and the flax meal and process until the mixture forms a ball.
- Roll into walnut-sized balls. As you form the balls, press some coconut flakes into the surface.
Note: If the mixture is dry, you can add some water, juice, or honey until it’s moist enough to hold together. This recipe is also good with apricots and almonds. The balls also freeze well.
