Maple Yam Cups

Adapted from the Vermont Maple Festival Cookbook, St. Albans, Vermont, 2005

6 large oranges
6 medium yams
4 Tablespoons butter
1/2 cup orange juice
1/4 cup NOW Real Food® Maple Syrup*
1 teaspoon salt
  1. Cut oranges in half and remove pulp, saving empty shells.
  2. Cook yams until tender, then peel and mash with butter.
  3. Beat in orange juice, salt and maple syrup.
  4. Pile into orange shells.
  5. Brown in 325 degree F oven for 15 minutes.
