Sugarless Sugar Chocolate Cake

1 1/2 cups sugar
1-1/2 cups all-purpose flour
1/2 cup NOW® Organic Cocoa Powder
2 eggs
1 cup milk
½ cup boiling water
1/2 cup NOW® Real Food™ Organic Virgin Coconut Oil
2 teaspoons NOW® Real Food™ Organic Vanilla Extract
1-1/2 teaspoons baking powder
1 teaspoons baking soda
1 teaspoon salt

1) Heat oven to 350F (325F Convection oven). Grease and flour 2 9-inch round baking pans
2) In a large bowl combine all-purpose flour, cocoa, baking soda, and baking powder until fully incorporated
3) In a stand mixer with paddle attachment place coconut oil and cream until the coconut oil has softened in texture.  Add sugar and mix until full combined
4) Add whisked eggs, milk, and vanilla extract and continue to mix until fully incorporated.
5) Add half of the dry ingredients and mix for 2 minutes
6) Add boiling water and continue to mix
7) Add the rest of the dry ingredients and mix until full combined
8) Pour batter into prepared pans
9) Bake for 35-40 minutes or until wood pick inserted comes out clean
10) Cool for 10 minutes and serve
