Going Bananas Pancakes

1/2 cup Living Now™ Organic White Rice Flour
1 tablespoon NOW® Real Food™ Sugarless Sugar™
2 teaspoons Baking Powder
1 teaspoon Cinnamon
1 egg, beaten
1 cup Rice Milk
2 ripe bananas mashed
2 tablespoons + 4 teaspoons NOW® Real Food™ Organic Virgin Coconut Oil , melted
4 teaspoons NOW® Real Food™ Grade A Maple Syrup

1) In a bowl combine flour, sugar, baking powder, and cinnamon
2) In a separate bowl combine whisked egg, rice milk, coconut oil, and bananas
3) Whisk in the wet ingredients with the dry ingredients until fully incorporated
4) In a sauté pan place 1 teaspoon of NOW Virgin Coconut Oil on medium heat
5) Add 1/4 cup of batter into the pan
6) Cook on both sides until lightly browned
7) Top with 1 teaspoon of NOW Grade A Maple Syrup and serve
