Cumin Infused Mangoni Quinoa

Sweet and nutty flavors mingle perfectly in this heart-healthy side dish.

Makes 4 servings

Ingredients
3 tablespoons chopped NOW Pecans*
2/3 cup NOW Organic Quinoa Grain*
2/3 cup NOW Mangoni Juice
2/3 cup water
1/3 cup chopped NOW Organic Dried Apricots*
1/4 cup NOW Goldenberries, chopped
2 scallions, finely chopped
1 tablespoon chopped fresh cilantro
1 teaspoon NOW Extra-Virgin Olive Oil*
1/2 teaspoon salt

  1. Place quinoa in a fine-mesh strainer; rinse under cold running water 3 minutes.
  2. In medium saucepan toast quinoa for 1 minute on high heat
  3. Add Salt, Mangoni Juice, Water, Dried Apricots, and Goldenberries.
  4. Heat until the mixture has reached a boil
  5. Reduce heat; cover and simmer for 15 minutes or until liquid is absorbed.
  6. Place Quinoa in a separate bowl and add Cumin.
  7. Add toasted pecans, green onions, and cilantro.
  8. Stir in Oil to finish and serve.
