Raw Food Breakfast (and Healthy Snack)

8 dates
1 cup buckwheat groats
2 soft pears
1 apple coarsely diced
2 Tablespoons NOW Real Food® Organic Shredded Coconut*
½ cup mixed seeds and nuts such as NOW Real Food® Sunflower Seeds*
2 Tabelspoons gogi berries or raisins
1 Tablespoon NOW Real Food® Organic Flax Seeds*
Cinnamon to taste
  1. In a large bowl, cover buckwheat groats and dates with water and soak overnight at room temperature. 
  2. Soak mixed seeds, nuts, gogi berries/raisins in water overnight in a separate bowl at room temperature. 
  3. Drain buckwheat and dates, reserving 1cup of liquid. 
  4. Blend reserved liquid, buckwheat, and dates together with cut up pears and apple. 
  5. Top with coconut, mixed seeds and nuts, gogi berries/raisins, flax seed, and cinnamon.
