Raw Food Breakfast (and Healthy Snack)
|1 cup buckwheat groats|
|2 soft pears|
|1 apple coarsely diced|
|2 Tablespoons NOW Real Food® Organic Shredded Coconut*|
|½ cup mixed seeds and nuts such as NOW Real Food® Sunflower Seeds*|
|2 Tabelspoons gogi berries or raisins|
|1 Tablespoon NOW Real Food® Organic Flax Seeds*|
|Cinnamon to taste|
- In a large bowl, cover buckwheat groats and dates with water and soak overnight at room temperature.
- Soak mixed seeds, nuts, gogi berries/raisins in water overnight in a separate bowl at room temperature.
- Drain buckwheat and dates, reserving 1cup of liquid.
- Blend reserved liquid, buckwheat, and dates together with cut up pears and apple.
- Top with coconut, mixed seeds and nuts, gogi berries/raisins, flax seed, and cinnamon.
