Flax Seed Muffins

You can vary this healthy, tasty recipe by using dates instead of raisins or pecans instead of walnuts.

Makes 15 muffines

Ingredients
1 1/2 cups whole wheat flour
3/4 cup NOW Organic Flax Seed Meal
3/4 cup NOW Oat Bran
1/2 cup brown sugar
2 teaspoons baking soda
1 teaspoon baking powder
1/2 teaspoon salt
2 teaspoons cinnamon
1 1/2 cups carrots, shredded
2 apples, peeled and shredded
1/2 cup raisins (optional)
1 cup NOW Raw Wanuts, chopped
3/4 cup milk
2 eggs, beaten
1 teaspoon NOW Organic Vanilla Extract
  1. Mix together flax seed, oat bran, sugar, baking soda and powder, salt and cinnamon.
  2. Stir in carrots, apples, raisins, and nuts.
  3. Combine milk, eggs, vanilla.
  4. Pour wet ingredients into dry.
  5. Stir until dry ingredients are moistened. Do not over mix.
  6. Fill muffin cups 3/4 full.
  7. Bake at 350°F for 15-20 minutes.
