Macaroon Muffins

| Ingredients |
| 1 1/2 cups whole wheat flour |
| 1 cup NOW Real Food® Rolled Oats* |
| 2 tsp. baking powder |
| 1 tsp. ground cinnamon |
| 1 cup low-fat milk |
| 1 egg |
| 1/4 cup NOW Real Food® Extra Virgin Coconut Oil* |
| 1/2 tsp. NOW Real Food® Vanilla Extract* |
| 1/2 cup honey |
| 1/2 cup raisins |
| 1 cup NOW Real Food® Unsweetened Organic Shredded Coconut* |
- Preheat oven to 375 degrees F.
- Lightly grease a 12-cup muffin tin.
- Mix together flour, oats, baking powder, and cinnamon.
- In a separate bowl, whisk together milk, egg, oil, vanilla, and honey.
- Add to dry ingredients and stir until smooth.
- Fold in raisins and coconut.
- Pour batter into greased muffin cups.
- Bake 20 to 25 minutes.
