Cranberry-Orange Muffins (Gluten Free)

Makes 6 medium-size muffins

1 cup Living Now™ All Purpose Flour, Gluten-Free*
1 whole orange
1 egg, lightly beaten
2 tsp orange rind
2 tbsp orange juice
3 tbsp NOW® Grapeseed Oil*
4 tbsp NOW Real Food® Agave Nectar*
Cranberry Sauce
1/2 cup fresh raw cranberries
Juice from 1/2 orange
1 tbsp NOW Real Food® Xylitol*

       1. Take 1 whole orange and slice in half, using one half for the muffin mix and the other half for the cranberry sauce.
       2. Blend Muffin Mix ingredients and set aside.
       3. Mix Cranberry Sauce ingredients and heat until berries pop, then let cool.
       4. Fold Cranberry Sauce into Muffin Mix. 
       5. Fold in baking mix.
       6.Bake all ingredients together at 400 degrees for 15 minutes.
