Blueberry Muffins - Gluten-Free

Makes 6 medium sized muffins

Ingredients
1 cup frozen or fresh blueberries
3 tbsp NOW Real Food® Agave Nectar*
2 tbsp grape seed oil
2 tbsp NOW Real Food® Erythritol*
1/3 cup coconut, finely shredded
2 eggs, lightly beaten
1 tsp NOW Real Food® Vanilla Extract*
1 cup NOW Real Food® Gluten-Free Baking Mix*
  1. Mix above ingredients.
  2. Fold in baking Mix
  3. Bake at 400 degrees for 15 minutes
