Blueberry Muffins - Gluten-Free
Makes 6 medium sized muffins
| Ingredients |
| 1 cup frozen or fresh blueberries |
| 3 tbsp NOW Real Food® Agave Nectar* |
| 2 tbsp grape seed oil |
| 2 tbsp NOW Real Food® Erythritol* |
| 1/3 cup coconut, finely shredded |
| 2 eggs, lightly beaten |
| 1 tsp NOW Real Food® Vanilla Extract* |
| 1 cup NOW Real Food® Gluten-Free Baking Mix* |
- Mix above ingredients.
- Fold in baking Mix
- Bake at 400 degrees for 15 minutes
