Brown Rice and Raisin Breakfast Pudding

This breakfast pudding can be served hot or cold.
Serves 4
1 cup water
1 cup uncooked brown rice
1/2 cup raisins
1/4 cup NOW Real Food® Organic Maple Syrup*
1 cup soy milk
1/2 cup NOW Real Food® Raw Almonds*
1 tsp. ground cinnamon
1/2 tsp. ground cardamom
  1. In a medium saucepan, bring water to a boil. 
  2. Add rice and stir. 
  3. Reduce heat, cover and simmer for 45 minutes, or until rice is tender.
  4. In a medium saucepan, combine cooked rice, raisins, maple syrup, soy milk, almonds, cinnamon and cardamom. 
  5. Bring to a boil over medium-high heat, then immediately reduce heat to low and simmer, stirring frequently for about 5-8 minutes, until thickened. 
  6. Spoon into bowls and serve.
