Flax Seed Muffins

Makes 15 muffins
 
Ingredients
1 1/2 cups whole wheat flour
3/4 cup NOW Real Food® Organic Golden Flax Seed Meal*
3/4 cup NOW Real Food® Oat Bran*
1/2 cup brown sugar
2 tsp. baking soda
1/2 tsp. salt
1 tsp. baking powder
2 tsp. cinnamon
1 1/2 cups carrots, shredded
2 apples, peeled and shredded
1/2 cup raisins (optional)
1 cup NOW Real Food® Walnuts*
3/4 cup milk
2 eggs, beaten
1 tsp. NOW Real Food® Vanilla Extract*
  1. Mix together flax seed, oat bran, brown sugar, baking soda, baking powder, salt, and cinnamon. 
  2. Stir in carrots, apples, raisins, and nuts.
  3. Combine milk, eggs, and vanilla.
  4. Pour wet ingredients into dry, and stir until dry ingredients are moistened, careful not to over mix.
  5. Fill muffin cups 3/4 full.
  6. Bake at 350 degrees for 15-20 minutes.
