Flax Seed Muffins
| Ingredients |
| 1 1/2 cups whole wheat flour |
| 3/4 cup NOW Real Food® Organic Golden Flax Seed Meal* |
| 3/4 cup NOW Real Food® Oat Bran* |
| 1/2 cup brown sugar |
| 2 tsp. baking soda |
| 1/2 tsp. salt |
| 1 tsp. baking powder |
| 2 tsp. cinnamon |
| 1 1/2 cups carrots, shredded |
| 2 apples, peeled and shredded |
| 1/2 cup raisins (optional) |
| 1 cup NOW Real Food® Walnuts* |
| 3/4 cup milk |
| 2 eggs, beaten |
| 1 tsp. NOW Real Food® Vanilla Extract* |
- Mix together flax seed, oat bran, brown sugar, baking soda, baking powder, salt, and cinnamon.
- Stir in carrots, apples, raisins, and nuts.
- Combine milk, eggs, and vanilla.
- Pour wet ingredients into dry, and stir until dry ingredients are moistened, careful not to over mix.
- Fill muffin cups 3/4 full.
- Bake at 350 degrees for 15-20 minutes.
