Maple Orange Bread
Adapted from the Vermont Maple Festival Cookbook, St. Albans, Vermont, 2005
NOW’s expert cook, Rosemary Nisbet, made this recipe and treated her co-workers to a sample. Everyone said it was absolutely delicious!
| Ingredients |
| 2 Tablespoons NOW Real Food® Organic Coconut Oil* |
| 1/2 teaspoon baking soda |
| 1 cup NOW Real Food® Maple Syrup* |
| 3 teaspoons baking powder |
| 1 egg, well beaten |
| 3/4 cup NOW Real Food® Walnuts* |
| Grated rind of one orange |
| Juice from 1 orange plus enough water to equal 3/4 cup liquid |
| 2 1/2 cups flour |
- Preheat oven to 350 degrees F.
- Blend melted coconut oil, maple syrup, egg and rind.
- Sift dry ingredients.
- Add dry ingredients alternately with orange juice; mix well.
- Add nuts.
- Bake in greased loaf pan for one hour.
Note: Bread is best baked at least one day before using
