Breakfast Egg Cheese Casserole

|6-8 slices bread, cut in pieces|
|1 lb. shredded sharp cheese|
|12 eggs, beaten|
|2 cups milk|
|3/4 teaspoon cayenne pepper, plus 3/4 teaspoon dry mustard|
|Salt to taste (up to 3/4 tsp.)|
|1 lb. bacon, fried crisp and broken OR sausage, drained|
- Layer ingredients in 9 x 13" buttered pan, saving some of the cheese to sprinkle on top (Can be put together the night before).
- Bake uncovered at 325 degrees for 45 to 60 minutes.
Some prefer less cheese, some add ½ cup half and half to the milk, some use less eggs.
