Corn and Soy Muffins

Makes 12 muffins

1-1/2 cups all-purpose flour
1/4 cup soy flour
1/4 cup sugar or NOW Real Food® Sucanat™*
2 eggs, beaten
1/4 cup soybean oil
1/2 teaspoon salt
1 tablespoon baking powder
1 cup light NOW Real Food® Soy Milk*
1/2 cup yellow cornmeal
  1. Mix flour, cornmeal, soy flour, sugar, baking powder and salt.
  2. Combine soymilk, eggs and oil; add to dry ingredients and mix only enough to moisten.
  3. Fill oiled muffins tins.
  4. Bake at 400°F 20 minutes.
