This recipe was adapted from a recipe from "Woman's Day" magazine, and is one of our favorites. It is well liked by children, especially if you use small muffin tins. It is a good way to get them to eat vegetables and some like it better if they don't know what the ingredients are!
|1 1/3 cup flour|
|2 tsp. NOW Real Food® Vanilla Extract*|
|1/4- 1/2 cup chocolate chips (optional)|
|1/4-1/2 cup plain yogurt|
|1 small sweet potato, skinned, boiled, and mashed|
|1 small zucchini, grated|
|1 large egg|
|2 Tbsp. vegetable oil|
|1/2 cup honey|
|2 1/2 tsp. baking powder|
|1/2 tsp. each baking soda and salt|
- Preheat oven to 350.
- Combine wet ingredients.
- Mix dry ingredients and stir until moistened. Don't over-mix or it will be tough.
- Fold in chocolate chips if desired (or may add raisins or nuts instead).
- Bake 12-15 minutes until toothpick comes out clean.
- Leave in pan 5 minutes, run knife around muffins, and lift out to cool. Yum!
