Power Muffins

This recipe was adapted from a recipe from "Woman's Day" magazine, and is one of our favorites. It is well liked by children, especially if you use small muffin tins. It is a good way to get them to eat vegetables and some like it better if they don't know what the ingredients are!    

1 1/3 cup flour
2 tsp. NOW Real Food® Vanilla Extract*
1/4- 1/2 cup chocolate chips (optional)
1/4-1/2 cup plain yogurt
1 small sweet potato, skinned, boiled, and mashed
1 small zucchini, grated
1 large egg
2 Tbsp. vegetable oil
1/2 cup honey
2 1/2 tsp. baking powder
1/2 tsp. each baking soda and salt
  1. Preheat oven to 350. 
  2. Combine wet ingredients. 
  3. Mix dry ingredients and stir until moistened. Don't over-mix or it will be tough. 
  4. Fold in chocolate chips if desired (or may add raisins or nuts instead). 
  5. Bake 12-15 minutes until toothpick comes out clean. 
  6. Leave in pan 5 minutes, run knife around muffins, and lift out to cool. Yum!
