The following recipe is from “Stevia Sweet Recipes”, by Jeffrey Goettemoeller. Health-conscious readers will find over 165 creative recipes which use the herb, Stevia. In addition to dozens of mouth-watering dessert suggestions, “Stevia Sweet Recipes” provides a tantalizing array of breakfast, main course, salad and side-dish recipes - all sugar-free!

Ingredients
1 recipe Crisp Cookie Crust (see recipe below), baked
¼ teaspoon Stevia Extract Powder
1 tablespoon water
2 pints fresh strawberries, hulled and sliced
2 tablespoons agar agar or 1 envelope unflavored gelatin
½ cup milk
¼ fresh lemon juice
½ cup plain yogurt
teaspoon Stevia Extract Powder
1 tablespoon water
2 pints fresh strawberries

Directions
1. Cool the baked crust.
2. Whip the cream in a small, deep bowl. Refrigerate.
3. Beat cheese in a medium bowl until fluffy and set aside.
4. Measure ¾ cup water and stevia into a small saucepan. Sprinkle agar agar (or gelatin) on top and set aside to soften 5 minutes.
5. Bring to a boil and then simmer 5 minutes (or for gelatin, melt over low heat).
6. Cool just to room temperature - do not let it firm up.
7. Beat into the fluffy cheese until well mixed. Add milk, lemon juice, and yogurt. Cool until slightly thickened.
8. Carefully fold in whipped cream.
9. Spoon into crust and chill several hours.
10. Dissolve 1/4 teaspoon stevia in 1 tablespoon water and stir into strawberries.
11. Serve over cheesecake.

Variations:

1. Alternate toppings are Peach Jam, Cranberry Applesauce, or Very Orange Sauce (see index for all of these).

2. Easy Oil Pastry (see book index) also works well with this cheesecake.
